What to do in the Florida Keys?

My husband and I are going to Key Largo (hilton grand resort) the week after Christmas.
I know that we will do the glass bottom boat, but I need advice for other activities. Any Key is good.
I like dancing and shopping and we both love food and sight seeing. Also, this is a romantic getaway, so a couple of nice restaurants are a must. BTW neither of us snorkel or dive and I am not likely to try it in December. But I do love the water.
