Florida vacation?

I'm planning a labor day trip to florida this year and I dont want to do miami (too trendy) or orlando (too touristy), but I would like somewhere where my husband and I can chill out near the beach and there are fun things to do ie; aquariums, beach, maybe snorkeling and some good restaurants and nightlife. I was thinking maybe Boca Raton or Ft. Lauderdale or the keys, but I dont know anything about either. Can someone please give me good suggestions on
